- Makes 14 pancakes
- 1-1/2 cups all-purpose flour
- 1 tablespoon baking powder
- 2 ripe bananas, peeled (approximately 1 cup)
- 1 egg
- 1/4 cup sugar
- 1/4 teaspoon salt
- 1 pint Ben & Jerry’s One Love, melted
- Scoops of Ben & Jerry’s One Love ice cream
- Hot fudge sauce
- Sliced bananas
- Sliced strawberries
- Maple Syrup
- Whipped cream
Whisk the flour and baking powder together in a small bowl and set aside.
Mash the bananas with a fork in a large bowl. Whisk in the egg and sugar until well combined. Add the melted ice cream and continue to whisk until well combined.
Fold in the flour mixture with a spatula until just combined. Don’t over mix. Let the batter rest for five minutes.
Meanwhile, heat a griddle or large skillet over medium-low heat. Spray generously with cooking spray. Pour 1/3 cup of the batter onto the griddle and gently spread into 5 inch rounds. Cook for 1 1/2 - 2 minutes, flip, and cook another 1 1/2 - 2 minutes until golden and cooked through.
Serve warm with your desired toppings. We like them with scoops of ice cream, sliced bananas, sliced strawberries, maple syrup, a dollop of whipped cream, and a mint garnish. Enjoy!
