Caramel Cookie Sweet Potato Toast Topper


  • 1 sweet potato
  • 3/4 cup peanut butter
  • 1 pint Moo-phoria Caramel Cookie Fix light ice cream
  • 1/2 cup blueberries
  • 1/4 cup pistachios
  • 1/4 cup salted caramel sauce
  1. Step 1

    Slice the ends off the sweet potato and cut into approximately six 1/4 inch thick slices lengthwise.

  2. Step 2

    Set the toaster to the highest setting and toast the slices 2-3 times until tender.

  3. Step 3

    Lay the sweet potato toasts flat on a plate and prepare your toppings.

  4. Step 4

    Top the sweet potato toasts with scoops of Moo-phoria ice cream, then garnish with blueberries, pistachios, and a drizzle of salted caramel sauce.
