Topping Ingredients
- 8 tbsp. (1 stick) unsalted butter
- 2/3 cup dark brown sugar
- 3-4 medium bananas, perfectly ripe, sliced lengthwise down the middle
Cake Ingredients
- 1/4 cup (1/2 stick) unsalted butter, room temperature
- 1/3 cup brown sugar
- 2 eggs
- 2 tsp. vanilla
- 1-1/2 cup all-purpose flour
- 2 tsp. baking powder
- 1 tsp. Kosher salt
- 1 pint Ben & Jerry’s Chunky Monkey ice cream, softened to room temperature

Step 1
Preheat your oven to 350° F. Prepare a 9” round cake pan with sides that are at least 2” high. Spray the pan with cooking spray, cut a piece of parchment to fit in the bottom of pan, then spray the parchment as well. Then, make the brown butter topping. Melt the butter in a heavy bottomed pot on medium/high heat until the butter begins to darken and you see tiny flecks. It will go from browned to burned pretty quickly, so keep a close eye on it. (If it smells at all burned, just throw it away and try again.) Pour the melted browned butter into the 9” pan, on top of the parchment. Sprinkle the dark brown sugar over the butter. Nestle your sliced bananas, cut side facing down, in the pan on top of the butter and sugar. Do your best to squeeze them in without overlapping.

Now prepare the cake batter. Mix the softened butter and brown sugar together in a mixing bowl until light and fluffy. Add the eggs one at a time, beating between additions and scraping the bowl when done. Add the vanilla. Whisk together the flour, baking powder, and salt in a small bowl. Mix in the flour mixture and the melted ice cream alternately, starting with half the flour mixture, then the ice cream, and ending with the rest of the flour, mixing in between each addition.

Pour the batter over the bananas and smooth the top.

Bake for 40-45 minutes or until a toothpick inserted in the middle comes out clean. Allow the cake to rest for about 5 minutes.

Carefully invert the cake by placing the serving plate upside down on top of the cake pan and then very carefully flipping the plate and cake pan over. Then carefully remove the pan from the cake. If there is brown butter glaze still in the pan, use a spatula to scrape it all out onto the cake. Slice, top with Chunky Monkey, and enjoy!
