Truffle Kerfuffle French Toast Cups

Ingredients

  • 6 slices of bread
  • 1/2 cup milk
  • 1 egg
  • 1/2 teaspoon vanilla
  • 1 pint Ben & Jerry’s Truffle Kerfuffle ice cream
  • Whipped cream, hot fudge sauce, and mint for optional garnish
Directions
  1. Step 1

    Preheat oven to 350 degrees. Cut the crusts off the bread and make a 2 inch cut into the center of the bottom of the slices and place in a single layer in a casserole dish. Whisk together the milk, egg, and vanilla in a small bowl and pour 1/2 of the mixture over the bread. Turn the slices over and pour the remaining mixture over the bread to coat evenly.

  2. Step 2

    Coat a muffin tin with cooking spray and place the slices into the tin forming cups. Bake at 350 degrees for 12-15 minutes.

  3. Step 3

    Cool in the pan for 10 minutes, then remove the cups and place on a serving platter.

  4. Step 4

    Fill each cup with 1 scoop of Ben & Jerry’s Truffle Kerfuffle ice cream and top with whipped cream, hot fudge sauce, and mint as desired and enjoy!
